Cauliflower Ki Subzi

ABOUT RECIPE

Today the recipe I am going to share is simple and easy but flavorful. This is my mom’s recipe. This subzi goes well with rice, chapati or paratha.

Pre time – 15 mins

Cook time – 30 mins

Recipe type – main course

Serve – 2-3

INGREDIENT

Cauliflower – 1 medium (cut into florets)

Potato – 2 medium (cut into cubes)

cumin/jeera – ¼ tsp

mustered – ¼ tsp

Onion -1 medium (chopped)

Tomato – 1 (chopped)

Red chilly pwdr – ½ tsp

Turmeric – ½ tsp

Coriander pwdr – 1 tsp

Garam masala – ½ tsp

Salt– as per taste

Oil – 2 tbsp

Water – ½ cup or as require

For Grinding

Garlic clove – 2-3

Coriander leaves – 2 tbsp

Green chilly – 2

Water – 1 tbsp

METHOD

Heat oil in a kadai, add jeera/cumin and mustered seeds let them crackle.

Now add chopped onion, fry onion till they translucent.

Now add cauliflower florets and potato cubes, fry them for 2 -3 mins in medium heat, keep turning with spatula occasionally.

After 5 mins add chopped tomato, red chilly,turmeric,coriander pwdr and salt, mix well. Now cover the kadai with the lid for 5 to 7 mins in low flame, and let cook the subzi in tomato juice.

After 5 to 7 mins open the lid, tomato gets mushy, now add ½ cup of water. Keep the flame high, when water starts boiling again cover the kadai with the lid. Keep the flame low, cook the subzi till cauliflower and potato become soft.

By the time in a small blender take coriander leaves, green chilly and garlic. Grind them by adding some water.

When cauliflower and potato get cooked, add this grinded paste and garam masala. Cook for a minute and then switch off the heat.

Cauliflower ki subzi is ready. Serve hot with chapati or rice.

                                      make paste

add this paste and garam masala when cauliflower and potato become cooked

                             and cook for  a minute
