There are many variation of making this stuffed capsicum as stuffing with potatoes, paneer, carrot- cabbage and potato-peas, Today I am making with potato stuffing. This recipe goes well with roti and dal or raita. So try this recipe and share your feed back.

Measuring cup used 1 cup = 220 ml
Capsicum/shimla mirch – 4 no
Potatoes – 5 -6 (medium sized)
Onion – 1 medium (chopped)
Green chilli – 1 (chopped)
Ginger-garlic – 1 tsp (paste or crushed)
Cumin/jeera – ½ tsp
Red chilli – 1tsp
Turmeric – ½ tsp
Coriander powder – 1 tsp
Dry mango powder – ½ tsp (optional)
Garam masala – 1 tsp
Coriander leaves – 2 tsp
Salt – as per taste
Oil – 2 to 3tbsp
For making stuffing
First boil the potato till they tender, peel and mash them nicely with the masher or hand.
Heat 1 tbsp of oil in kadai add cumin, crackle them. Add green chilli and onion, fry for a minute.
Add ginger-garlic, fry till raw smell goes.
Now add mashed potato, red chilli, turmeric, coriander powder, garam masala, dry mango powder and salt.
Mix them well, cook for 2 minutes.
Add fresh coriander leaves, mix and switch off the flame.
Keep the stuffing aside.
For making dish
Slice off the top part of capsicum, remove seeds.
Now with spoon or with your hand fill the potato stuffing in capsicum.
Now heat oil in kadai and place these stuffed capsicum.
Cover the kadai with a lid and cook the stuffed capsicum on low flame.
Check them often after every 5 to 6 mins and keep on changing the sides of the capsicum, so that all
the sides are cooked well. After changing sides again cover the kadai. Check, for changing the sides use two spatula to make it easy.
When capsicum get cooked nicely from all the sides switch off the flame.
Serve with roti and dal or raita combo.
Boil the potatoes and mash them
Chop onion and green chilli
Heat oil add cumin and then green chilli and onion
Add ginger – garlic paste
Place mashed potatoes , other spices and salt
Mix well and add Fresh coriander leaves,mix
Stuffing is ready
Cut capsicum from the top and remove seeds
Fill the potato stuffing in capsicum
Heat oil and place the capsicum
Cover with the lid, cook in low flame for 5 to 6 mins
After every 5 to 6 mins keep changing the sides of the capsicum and cover with lid
For changing the sides better use two spatula for easy
Stuffed capsicum is ready
