Parwal -Potato Fry

Parwal/pointed gourd and potato fry is easy and delicious north indian style side dish which I learn from my mother. You can serve it with paratha, chapati-dal and rice – dal combo.

Cook time – 20 mins

Ingredients

Parwal/pointed gourd – 350 g

Potato – 2 medium (cut into small cubes)

Cumin/jeera – ½ tsp

Mustard – ½ tsp

Garlic clove – 4-5 (grated)

Red chili – 1 tsp

Turmeric – ½ tsp

Coriander powder – 1 tsp

Garam masala – ½ tsp

salt – as per taste

Mustard or any cooking oil – 3-4 tbsp

Method

First prepare Parwal for this recipe. Wash Parwal and peel thin skin with the knife, just remove the outer thin part of parwal. Again wash them and cut into medium sized cubes.

Now heat oil in thick bottom kadai, add cumin and mustard seeds let them crackle.

Add Parwal and Potato, saute and fry them for 2 to 3 minutes or till Parwal and Potato slight brown, on medium to high flame.

Now add  grated garlic, red chili, turmeric, coriander powder, garam masala and salt, stir well and cover with the lid for 2-3 minutes for fast and healthy cooking, keep the flame on low to medium.

After 2-3 minutes open the lid and stir again. Again cover with the lid for 2-3 minutes. if needed sprinkle some water.

After 2-3 minutes again open the lid and check where Parwal and Potato get cooked or not.

When Parwal and potato cook nicely switch of the flame. Serve hot with paratha, chapati – dal and rice – dal combo.

Tip

You can make this dish without potato too.

Cut Parwal in cubes and cut potatoes in cubes

Heat oil in kadai, add cumin and mustard, let crackle

Saute and stir them till Parwal and Potato get light brown , on medium-high heat

Cover with the lid and cook for 5-6  minutes on medium heat, in between open and stir, if needed sprinkle water
