Veg Fried Rice (Indian Style)

Normally people go to restaurant to eat veg fried rice but do you know it is very simple and easy to make, I make it weekly once for my daughter’s tiffine. Here I am sharing the indian version of veg fried rice.

Serve – 2 -3
Basmati rice – 1 cup
Water – 1 ¾ OR 1.75 cups in cooker
Garlic clove – 4-5 (chopped)
Black pepper powder – ¼ tsp
salt – as per taste
Sesame or olive or any cooking oil – 1 ½ tbsp
Vegetables for making fried rice
Green/yellow/red capsicum – ¼ cup
Carrot – ¼ cup
Beans – ¼ cup
Cabbage – 2 tbsp
Spring onion (white portion) – 2 tbsp
Spring onion (green portion) – 2tbsp
Rinse rice very well and soak it in water for 30 minutes.
In pressure cook take rice and water and pressure cook it for 2 whistle.
Let cooker satele down on its own. Keep the rice aside till its cool completely.
Making fried rice
Chop all veggies finely and keep them aside. Remember chop beans very finely because they take much time to cook than other veggies.
Heat oil in pan and add garlic, saute it for few seconds. (Do not brown garlic).
Add spring onion whites and cook for 2 minutes.
Now add other finely chopped veggies except green spring onion. (insure that the flame of stove is on high).
Stir fry the veggies on high flame. Continuously toss and stir while frying veggies so that they are cooked evenly without burning.
Now add cooked and cool rice, salt, pepper powder and spring green onion. Stir fry for few minutes till rice
mixed with the veggies nicely.
Now vegetable fried is ready to eat, serve hot.
To make it more flavorful and healthy you can add chopped mushroom along with veggies.
soak the rice for 20-30 mins
Add water and pressure cook it for 2 whistle, make it cool
Chop veggies for making fried rice
Heat oil in kadai, add garlic, saute (do not make it brown)
Add spring onion white, saute for some time
Add chopped veggies except green onion
Saute and stir it for some time on high flame
Add cooked rice, onion( green portion), salt and black pepper
Stir well, Fried rice is ready
