Palak Paneer Recipe

Ingredients

 

Palak/spinach  – 200 to 250 g

Hot water – 4 cups for blanching palak

Cold water or tab water – for ice bath

Paneer – 200 to 250 g (cut into cubes)

Cumin/jeera – ½ tsp

Onion – 1 medium (finely chopped)

Garam masala – ¼ to ½ tsp

kasuri methi – 1 tsp

Oil or ghee or butter – 3-4 tbsp or as needed

Salt as per taste

Water – ½ to ¾ cup For gravy

For making paste

Garlic clove – 3-4

Ginger – ½ inch

Tomato – 1 medium

Green chilly – 1 or 2

Cashew nuts – 8-10 (soak in hot water for 10 mins) Or Badam / almonds – 10-12 (soak in hot water for 10 mins then remove skin)

Method

 

For making Palak puree

First rinse Palak or spinach very with water. If stems are hard remove them, if they are soft just use as it.

Heat 4 cups of water in a pan, then leave Palak in hot water for 2 mins and switch of the flame.

Strain the palak, immediately rinse palak under tab water or cold water. This will help Palak to preserve its green color.

Grind palak in a smooth and fine paste. If needed add some water.

For making Paneer soft

Heat a tsp of butter or oil in non-stick pan, add paneer cubes it that and toss for few seconds. leave this paneer in the hot water till we need them.

For making Palak Paneer

In a blender take ingredients under ‘for making paste’ and grind them in fine paste. Keep aside.

Heat oil or butter or ghee in kadai or pan, add cumin. Let crackle.

Add finely chopped onion, saute and stir till they translucent.

Add the blended paste, stir and saute until oil separates from masala.

Add garam masala, kasuri methi and salt, stir for a minute. Be careful masala should not burn.

Add palak puree and water, stir well.

Cook this palak puree on simmer for 3-4 mins.

Add paneer, stir well ,cook for a minute and switch off the flame.

Last garnish with cream.

Serve hot with chapati, naan or jeera rice.

Tips

 

if you do not have cream just mix malai and milk, make them smooth and your fresh cream is ready.

You can make this recipe with tofu too, for that just slightly fry tofu cubes and add just how we added paneer.
