Chicken Achari (dry recipe)

Serve – 3
Chicken (with bone) – ½ kg
Onion – 2 (finely chopped)
Ginger-garlic – ½ tbsp (paste or crushed)
Curd/yogurt – ½ cup
Lemon – ½
Red chilly powder – 1 tsp
Kashmiri red chilly powder – 1 tsp (for color)
turmeric – ½ tsp
Salt – as per taste
Mustard oil – 2 tbsp
Hing/asafoetida – a pinch
For achari masala
Whole red chilly – 2-3
Bay leaf – 1
Green cardamom – 2-3
Black cardamon – 1
Methi/fenugreek seeds – ½ tsp
Onion seeds/carayat – ¼ tsp
Clove – 3-4
Mustard – ½ tsp
Heat mustard oil in a thick bottom pan or kadai.
Add all the ingredients under ‘for achari masala’, let them splatter nicely.
Add onion, fry onion till translucent.
Add ginger and garlic, fry till raw smell goes off.
Add turmeric, red chilly powder and kashmiri red chilly powder, fry them for few seconds.
Add curd, stir well and cook curd until oil separates.
Add chicken and fry them for 5 mins on medium heat.
Add salt, hing and lemon juice. Stir well.
Cover the chicken with a lid and let it cook at simmer.
Since it a dry recipe there is no need to add water, chicken will cook in its own juice.
Cook chicken until its gets tender, stir occasionally.
Achari chicken is ready serve as starters or side.
Heat the mustard oil nicely then add ingredients.
Cook chichen at simmer to avoid burning.
Covering chichen with the lid is very important so do not avoid it.
To enhance the taste you can add ½ tsp of sugar.
These are the whole achari masala
Heat mustard oil
Add all the achari masala
Splatter them nicely
Add finely chopped onions
Fry till onion turn translucent
Add ginger-garlic paste or crushed, fry till raw smell goes
Add red chilly, kashmiri red chilly and turmeric powder, fry for few seconds
Cook curd till oil separates
Add chicken pieces
Fry chicken for 5 mins over medium heat
Add lemon juice and stir
Cover with the lid and cook over low heat
In between open the lid and stir, cover again
Cook chicken till it’s get tender and add coriander
stir and switch off the flame, achari chicken dry is ready
