Stuffed Bitter Gourd/ Bharwan Karela

Ingredients

Bittergourd – 300 g (medium sized)

Red chilly powder – 1 tsp

Turmeric – ½ tsp

Mustard or sunflower oil – 4 tbsp (approximately)

salt – as per taste

Oil – 3 tbsp or some more

For making paste

Onion – 1 medium or 40 g

Garlic clove – 5-6

Dry coriander seeds – 1 tbsp

Cumin seeds/jeera – 1 tsp

 

Method

Rinse the bitter gourd/karela and peel the outer skin with the peeler.

Wash again. (if you do not like bitter taste leave bitter gourd in hot+salty water for 10 mins )

Give a slit cut to the karela.

Take all the ingredients under ‘for making paste’ and make fine paste.

Heat 1 1/2  tbsp of oil and add grinded paste. Add salt.

Fry masala till water evaporates and dry. Let it cool down.

Stuff the masala in karela.

Heat 2 tbsp of oil in thick bottom kadai.

Place stuffed karela and fry them all the sides, for fast cooking cover with lid and change the sides in between.

When karela cooked cover the karela with a plate and keep any heavy thing on top of the plate. This method will make karela crisp. Do both the sides. (see pics)

Now stuffed karela is ready serve it with dal-roti or dal – rice combo.

Place the stuffed karela

Cover with the lid and cook them for 4-5 mins  over medium flame

Open the lid and turn all the karela other sides and again cover with lid

Follow this method till karela cooked from the all  sides

Now cover the karela with a plate and keep any heavy thing on top of the plate

After 2 minutes turn karela and follow same method this side too
