Dhaba style Chicken Masala Gravy

Preparation time – 15mins
Making time – 60 mins
Serve – 4-5
Cup size – 220 ml
Chicken – 1 kg (with bone)
Onion – 4 -5 (finely chopped)
Ginger-garlic – 3-4 tbsp (crushed or paste)
Tomato – 2 (make paste)
Malai or cream – 3 – 4 tbsp
Lemon – 1
Red chilly powder – 1 tsp
Kashmiri red chilly powder – 1 tsp
Turmeric – ½ tsp
Coriander powder – 3-4 tsp
Garam masala – 1 tsp
Oil/ghee – ¼ cup or some more
Salt – as per taste
Water – 1 cup or for more gravy add some more
Whole garam masala
Bay leaf – 1
Black cardamon – 2-3
Green cardamom – 4-5
Clove – 4-5
Whole black pepper/kalimirch – 6-7
Cinnamon stick – 1 inch
Cumin seed – 1 tsp
Finely chop onions and keep aside.
Heat oil or ghee in a pan add ingredients under ‘whole garam masala’ and let crackle.
Now add finely chopped onion and whole red chilly, stir and saute them till onion turn translucent.
Now add ginger-garlic (paste or crushed), fry till raw smell goes off.
Add red chilly, kashmiri red chilly, turmeric, coriander and garam masala powders.
Fry for few seconds.
Add tomato paste, stir till oil separates from the masala.
Add cream/malai, stir and saute till again oil separates from the masala.
Add chicken pieces and fry them with masala for 5 mins.
After 5 mins add salt and lemon juice, stir and cover the chicken with lid and let it cook at simmer for 15 mins. Stir in between.
After 15 mins add 1 cup (for more gravy add more water) of water and cook chicken at simmer until its gets
Chicken masala gravy (dhaba style) is ready.
Serve it with chapati, naan, tandoori roti or rice.

Heat oil , add whole garam masala
Add whole red chilly and chopped onion
Saute till translucent
Add ginger garlic paste, fry till raw smell goes off
Add red chilly, kashmiri red chilly, turmeric, coriander and garam masala powder, fry for some time
Add tomato paste, fry till oil separates

Fry chicken with masala for 5 mins
Add lemon juice
Put the lid and cook chicken over simmer for about 15 mins, open in between and stir
Now add water
Put The lid and cook till chicken gets tender
Add coriander leaves and switch off the flame
Dhaba style is ready
