Spicy Tomato and Garlic Chutney

About Recipe

Another south Indian style tomato-garlic chutney. You can have this with idli, dosa and paniyaram.

Serve – 2-3

Ingredients

Tomato – 2 medium

Garlic clove – 12 – 15

Tamarind – 1/2 inch

whole long red chilly/round chilly – 5-6

Gur/jaggery or sugar  – 1/4 tsp

Salt – accordingly

Water – 2-3 tbsp

For seasoning

Oil – 1 1/2  tsp

Mustard – 1/2 tsp

Urad dal – 1/2  tsp

Hing/asafoetida – a pinch

Curry leaves – 6-7

 

Method

Heat oil in kadai, add garlic and fry till light brown over low – medium flame.

Take them out.

In the same oil add red chilly fry for few seconds. Take them out.

In the remaining oil add the tomato and fry till they turn mushy.

Then take  fried garlic, red chilli, tomato, gur/sugar, tamarind  and salt in a blender,  add little water and make smooth paste.

Transfer  this paste to a bowl.

For seasoning  medium heat oil add mustard let splutter.

Add urad dal and curry leaves, fry till dal turn light brown.

Add hing/asafoetida and place this seasoning over  the chutney and mix well.

Tomato and garlic chutney is ready.

Till become soft

Take garlic, red chilly, tomato, tamarind, jaggery and salt in a blender

Add water

Make paste

Medium heat oil,  add mustard

Add urad dal and curry leaves, fry till dal get light brown

Place this seasoning over the chutney
