Carrot Fried Rice Recipe

Easy and healthy carrot fried rice. This carrot rice is mildly spiced. Goes well in tiffin and lunch. I like to pair it with onion raita.
For cooking rice
Rice (basmati or any other) – 1 cup rice
Water – 1+3/4 cup
For making carrot fried rice
Carrot – 2 -3 medium (grated)
Onion – 1 medium (sliced)
Ginger-garlic – ½ tsp (paste or crushed)
Cashew – 3-4 (broken)
Red chilly – ½ tsp
Garam masala- ¼ tsp
Salt – as per taste
Oil – 1 – 2 tbsp
Coriander leaves – for garnishing
Cumin – ½ tsp
Bay leaf – 1
Cinnamon stick – 1 inch
Green cardamon – 2
Clove – 2
Rinse and soak rice for 20 to 30 min in enough water.
Pressure cook rice along with water.
Pressure cook for 2 whistle.
Let it cool completely.
For making fried rice
Heat little oil and fry broken cashew nuts till they turn light brown and take them out. Keep aside.
Add some more oil.
Add ingredients under ‘for seasoning’ , let them splutter.
Add sliced onion and fry till light brown.
Add ginger-garlic and fry till raw smell goes off.
Add Garam masala and red chilly powder, stir well.
Add carrot, stir and saute carrot for 15-20 seconds.
Add cooked – cool rice, salt and chopped coriander leaves.
Mix well and turn off the flame.
Soak 1 cup of rice for 20 -30 min
Add 1 1/2 to 1 3/4 cup of water and pressure cook for 2 whistle, then let it cool down completely
Fry cashew in oil
Till golden and keep aside
Heat oil and whole spices
Add sliced onion
Fry till light brown
Add ginger and garlic (paste or crushed), fry till raw smell goes off
Add red chilly and garam masala, stir once
Add grated carrot, stir and saute for 15 – 20 seconds
Add cooked and cool rice, coriander and salt
Carrot fried rice is ready
