Achari Gobhi Gravy / Achari cauliflower Gravy

About Recipe

Try this achari flavoured cauliflower or gobi gravy which goes well with chapati, naan, tandoori roti and rice.

Preparation time – 15 mins

Measuring cup used 1 cup = 220 ml

Cauliflower – 1 medium sized (cut into the florets)

Onion – 2 medium (finely chopped)

Ginger-garlic (paste or crushed) – 1/2 tbsp

Red chilly powder – 1 ½ tsp

Kashmiri red chilly powder – 1/2 tsp (for color)

Coriander powder – 1 tsp

Turmeric – ½ tsp

Curd – ¼ to 1/2 cup

Tomato – 1 medium (make paste)

Sugar – ¼ tsp

Water – ½ to ¾ cup (I have added ¾ cup)

Mustard Oil – 5-6 tbsp (for achari flavour use mutard oil)

For achari masala

Bay leaf – 1

Cloves/laoung – 3-4

Elaichi/green cardamon – 2-3

Black cardamom – 1

Methi/fenugreek seeds – 1/4 tsp

Onion seeds / karayat – 1/4 tsp

Shah jeera /kala jeera – 1/2 tsp

Mustard – 1/2 tsp

Hing/asafotida – a pinch

Whole red chilly – 3-4


Heat oil nicely (make sure that oil is hot) add all ingredients under ‘for achari masala’.

Let them crackle nicely to get more achari aroma.

Now add finely chopped onion and saute till translucent.

Now add ginger-garlic (paste or crushed), fry till raw smell goes off.

Add red chilly, kashmiri red chilly and coriander . Fry for 5-6 seconds.

Add curd, saute and stir till oil saprets.

Add tomato and stir well.

Saute this mix till oil saparets again.

Add cauliflower, stir well.

Fry cauliflower with the masala for a min at medium flame.

Add salt and turmeric, stir well and put the lid.

Cook cauliflower  for 2 mins over simmer.

After 2 min open the lid and add around ½ to ¾ cup of water.

Bring it boil.

When the gravy starts to boil, simmer the flame and cook till cauliflower gets cooked by putting the lid.

When the cauliflower gets cooked, add sugar and garnish with coriander. Stir well and switch off the flame.

Serve hot with any indian bread or rice.

These are the achari masala


Nicely heat mustard  oil in kadai


Place all achari seasoning


Add finely chopped onion, saute till translucent


Add ginger garlic , crushed or paste, fry till raw smell goes off


Add coriander and red chilly powder, stir


Add curd


Saute till oil separates


Add tomato paste


Saute till oil Separates again


Add cauliflower,  fry cauliflower with masala for a minute


Add salt


Add turmeric, stir


Put the lid and cook cauliflower for 2 minutes


Add water


Bring it to boil


Again put lid at simmer till cauliflower cooked well


Add sugar, stir


Add chopped coriander leaves, and switch off the flame


Achari gobhi gravy is ready
