Method

Rinse the palak in water very well and drain it .

Boil 2 cups of water in a kadai, add palak in that and boil it for 2-3 min.

Drain it and make palak puree. Keep aside. Do not throw the stock in which we have boiled palak we need them while making dough.

In a large bowl take wheat flour, besan, carom seeds, hing, red chilli powder and salt. Mix well.

Add Palak puree and 2 tsp of ghee (adding ghee is optional). Mix well.

Add the stock (in which we boiled palak), and make a smooth dough.

Cover the dough with a plate for 15 min or you can make paratha immediately.

Devoid dough into 11-12 parts or medium sized ball.

Roll the dough ball into a medium sized circle.

Apply 2-3 drops or oil or ghee on the top of the roll dough.

Fold it one side, and again apply oil or ghee on the folded side.

Again fold it.

Now it will be like triangle shape.

Use duster flour and roll it into medium sized paratha with the help of rolling pin.

Place this paratha to the hot tava.

Cook paratha both the sides by adding oil or ghee till it turn crisp and brown both the sides.

Follow the same method for other parathas.

 Tips

Instead of ajwain you can add grated garlic too.

When you place paratha on tava it should be hot.
