Hariyali Mutton/Hariyali Mutton Gravy

Ingredients

Mesurement cup used, 1 cup = 220 ml

Mutton – 800 g to 1kg cut into medium sized

Onion – 1 medium (finely chopped)

Cumin/jeera – 1 tsp

Tomato – 2 medium (make paste)

Curd – ½ cup

Mutton masala – 2 tsp (you can buy from the shop)

Garam masala powder – 1 tbsp (instade of garam masala you can you whole garam spicses)

Red chili powder – 1 ½ – 2 tsp

Turmeric powder – 1 tsp

Coriander powder – 2-3 tsp

Water – 1 cup or add accordingly

Oil – ½ cup or use accordingly

Fresh coriander leaves for garnishing

For making paste

Onion – 3-4 medium (roughly chopped)

Ginger – 2 inch

Whole Garlic – 2

Green chili – 2-3

Pudina/ mint leaves – ½ cup

Fresh coriander leaves – ¾ cup

Method

Rinse mutton with water, drain it nicely and keep aside.

Take  onion, ginger, garlic, green chili, fresh coriander and mint leaves in a blender and make paste.

Heat oil in a cooker, add cumin and let splutter. (if you are using whole garam masala add here)

Add chopped onion and saute till onion turns light brown.

Add mutton masala, red chilli powder, turmeric and coriander powder, stir for 4-5 second. Becarefull masala should not burn.

Add blended paste, saute and stir till oil saprtes from the masala.

Add tomato paste, saute and stir till oil saprets from the masala.

Now add curd, saute and stir till oil saprets again from the masala.

Add mutton and garam masala.

Fry mutton along with the masala for 5 minutes over medium flame. Frying is very important, it will give a nice aroma to your mutton.

Add salt and water.

Put cooker’s lid and pressure cook mutton.

For pressure cooking after 1 whistle turn the flame low and cook for 10 – 15 minutes. Some time mutton takes more time to cook so if mutton is not cooked well cook for some more time but at the same time it should not over cook too.

Let cook settles down on its own.

When the mutton os hot garnish it with chopped coriander leaves.

Pudina mutton masala is ready, serve hot with roti, rice etc.

Tips

If you are not using garam masala powder add 1 bay leaf, 2-3 black cardamom, 3-4 green cardamom, 4-5 cloves,

5-6 pepper corns and 2 cinnamon stick. Add them along with jeera in oil.

Add 3 tsp  coriander, 2 tsp red chili and 1 turmeric powder

Fry for 2-3 seconds

Saute till oil saprets

Add 1/2 cup curd

Add 1 tbsp garam masala, srir

Pressure cook the mutton (after 1 whistle cook over low flame for 10 -15 min)

When the cooker sattles down on its own add chopped coriander, stir
