Bhindi/Okra Fry OR Lady Finger Fry

Measuring cup used 1 cup = 220 ml

Bhindi/okra/lady’s finger – 500 g

Onion – 1 medium (sliced)

Green chili – 1 chopped

Garlic – 4-5 (chopped or crushed)

Cumin/jeera – ½ tsp

Mustard seeds – ½ tsp

Red chili powder – 1 tsp

Turmeric – ½ tsp

Coriander powder – 1 ½ tsp

Salt – as per taste

Oil – 4-5 tbsp


Rinse bhindi with water 2-3 times, drain it and wipe it with the cotton cloth to make it dry or if you have time dry it under the fan.

Cut up and down parts of bhindi with the knife.

Chop them into the ½ inch pieces. set aside.

Now heat oil in thick bottom kadai.

Add mustard seeds and cumin seeds, let them splutter.

Add garlic, fry it till it’s turn light brown.

Add sliced onion and chopped green chilli, saute till it starts turning brown. Do not fry it till brown otherwise it will burn while frying bhindi.

Now add chopped bhindi, stir and turn the flame at medium.

Now let saute bhindi at medium flame and stir in every 2 mins. (be careful bhindi should not burn)

Note- do not stir bhindi too much otherwise it will break. And do not put lid while frying otherwise your bhindi will be turn sticky.

Fry bhindi till it turns brown and light brown from its edges. It will take about 8-10 mins.

When the bhindi turns brown and light brown add red chili, turmeric and coriander powder, stir slowly.

Again cook bhindi for a minute.

Add salt, stir and cook for few seconds and turn off the flame.

Bhindi fry is ready. Serve it with roti, paratha and rice – dal combo.


Better use thick bottom kadai for frying bhindi.

Fry bhindi over medium flame is very important other wise your subzi will not cook properly.

while frying bhindi do not collect it in the center of the kadai, spread it and fry other wise it will not fry evenly.

Do not use lid while frying otherwise your wise subzi will be sticky.

In short


Rinse lady’s finger with water


Drain it and wipe it with the cotton cloth


Chop them into 1/2 inch


Heat oil


Add mustard and cumin, let splutter


Add chopped garlic, fry till light brown


Add sliced onion and chopped green chilli


Saute till onion starts turning brown


Add bhindi


Saute at medium flame, stir it  in every 2 min


Saute till bhindi turns light brown


Add coriander, red chilli and turmeric powder


Stir well and saute bhindi for a minute


Add salt and stir


Cook bhindi for some time, turn off the flame


Bhindi fry is ready
