Rabri / Dry Fruit Rabri Recipe

About Recipe

                            Rabri is traditional Indian sweet.  Rabri is basically reduced milk that is lightly sweetened with sugar and flavored with cardamom powder and saffron, to make it more rich add chopped nuts. Rabri is easy to make but it takes time. You can serve this dessert with malpua, jalebi, and gulab jamun.

             

 Preparation Time –  5 mins

Cooking time – 1 hour 15 mins

Cuisine – North Indian

INGREDIENTS ;

 

Full fat milk or buffalo milk – 1 ½ liters

Sugar – 2 – 2 ½ tbsp.

Green cardamom powder – ¼ tsp

Badam/almonds – 8-10

Pista – 6-7

Saffron strands /kesar – 5-6

 

METHOD                                                                                                                                                                                            

  Take broad and thick bottom pan or non- stick kadai, pour milk in it and boil over medium flame.

Meanwhile soak the almonds and pistachios in hot water for 20 mins. Then peel them and chop them into the slices. Set aside.

When milk starts to boil reduce the flame to low.

Stir at regular intervals of 2-3 minutes but not continuously.

When the layer of malai or cream appears on the top of the milk, shift to towards the side of a pan with the help of the spatula.

In between scrape small cream chunks which are collected on the side of the pan.

Follow the same process until milk is reduced to 1/3 of its original quantity.

Now add sugar, sliced almond – pistachios and saffron, stir well.

Cook for 2 minutes.

Finally add cardamom powder, stir and turn off the flame.

Let it cool down completely and then refrigerate it for 1- 2 hours before serving.

 

Tips

Use thick bottom pan or kadai for making rabri.

Maintain low – medium heat  for making rabri.

 

  

In Short

 Let it cool down and refrigerate it for 2 hours and serve
