Parwal – Aloo Curry / Easy Parwal Curry / Pointed Gourd – Potato Curry

Today I am showing another method of making Parwal – aloo subzi. The method of making this curry is very simple and easy, it takes only 20 minutes to cook. Serve this parwal – potato curry with chapati, paratha and plain or jeera rice.
Preparation time – 10 minutes
Cooking Time – 20 – 25 minutes
Cuisine – North Indian
Serve – 3
Measurement cup used – 1 cup = 220 ml
Parwal / pointed guard – 6 medium size
Potato – 2 medium size
Onion – 1 medium (chopped)
Garlic – 4-5 (grated or paste)
Tomato – 1 medium (chopped)
Cumin / jeera – ½ tsp
Mustard seeds – ½ tsp
Red chili powder – ½ – 1 tsp
Turmeric powder – ½ tsp
Coriander powder – 1 tsp
Garam masala powder – ½ – 1tsp
Mustard oil or any other cooking oil – 1 ½ tbsp.
Salt – as per taste
Water – 1 cup or as needed
Rinse parwal very well, peel the outer thin skin then rinse again and chop into small or medium cubes. Set aside.
Peel the potatoes, cut into cubes and rinse well. Set a side.
Heat oil in a kadai, add mustard and cumin seeds, wait until they crackle.
Add chopped onion, saute till light brown.
Add grated garlic and fry for few seconds.
Add Chopped parwal – potato, stir well, cover with the lid and cook for 2-3 minutes over low – medium flame.
After 2-3 minutes open the lid and add red chili powder, coriander powder, turmeric powder and chopped tomato, stir and cover with the lid. wait until tomato gets mushy.
After 2 minutes open the lid, add water and bring it to boil.
Now simmer the flame and cook the vegetables over low flame until they cooked.
When vegetables are cooked turn off the flame, if you want garnish the curry with chopped green coriander.
Parwal – potato curry is ready. Serve with chapatti, paratha, plain or jeera rice.
Remove outer skin then rinse again
Cut into cubes, peel the potatoes and cut into cubes
Add mustard and cumin seeds, wait till crackle
Add chopped onion, saute till light golden brown
Add garlic, fry for few seconds
Add parwal and potato cubes, stir
Put lid and cook for 2-3 minutes over low – medium flame
Open the lid add red chili, turmeric and coriander powder, stir
Add chopped tomato and salt, stir and put lid. cook till tomato gets mushy
Add water, bring the gravy to boil
Add garam masala
Put lid and cook until potato and parwal get cooked (at low flame)
