Tamil Nadu Chicken Fry Recipe

Preparation time – 10 mins

Recipe type –  side dish/starters

Cuisine –  South Indian

Serve – 4



Measurement cup used 1 cup = 220 ml

Chicken – 750 g (cut into medium size)

Onion – 2-3 medium size (chopped)

Ginger – garlic – 2 tbsp (paste or grated)

Tomato – 1 medium (chopped)

Green chilli – 2-3 (cut into length wise)

Curry leaves – 2 stem

Cinnamon stick – 2 inch

Clove – 4 -5

Black pepper / kalimirch – ¼ tsp

Fennel seeds – ½ tsp

Cumin / jeera – ½ tsp

Red chili powder – 1 tsp or as per taste

Kashmiri red chili powder – 1/2 tsp

Turmeric – ½ tsp

Coriander powder – 2 tsp

Cumin powder – ½ tsp

Garam masala – ½ tsp

Oil – 2- 3 tbsp

Coriander leaves – 2 tbsp (chopped)

For making course powder

Fennel seeds – 1 tsp

Black pepper / kalimirch – 1 ½ tsp






Rinse the chicken with water 2-3 time and drain it completely.

Add lemon juice and salt, mix well and keep it in refrigerator to marinate for about 30 minutes.

Meanwhile in a small blender take 1 tsp fennel seeds and 1 1/2 tsp black peppercorns, make course powder. set aside till we need it.

After 30 minutes heat oil in a kadai. Add cinnamon, black pepper corn, fennel seeds, clove and cumin seeds. Wait until they crackle.

Add ginger – garlic (paste or grated), fry till raw smell goes off.

Add chopped onion, curry leaves and green chilies, saute for a minute.

Add marinated chicken and fry for 5-6 minutes over medium flame.

Add red chili, Kashmiri red chili, turmeric, coriander powder, cumin powder and garam masala. Fry for one more minute.

Add chopped tomato and salt, stir. Cover it up with the lid and cook until chicken gets tender and maintain low flame. Note – do not add water because chicken releases its own water and gets cooked.

When the chicken gets cooked add course powder that we made, stir well.

Finally add chopped coriander leaves, stir and turn off the flame.

Chicken fry is ready. Serve it as side dish or as starters.


In Short


Rinse chicken and drain it compeletly


Add lemon juice


Add salt


Add turmeric


Mix well and refrigerate it for 30 mins


Take fennel seeds and black pepper corns


Make course powder


Heat oil


Add above whole garam masala, wait until they crackle


Add ginger – garlic paste or grated, fry till raw smell goes off


Add chopped onion, slit green chilies and curry leaves


Fry until onion turns translucent


Add marinated chicken and fry for 5-6 minutes over medium flame


Add turmeric, red chili, kashmiri red chili, coriander,  cumin and garam masala powder, fry for one more minute


Add tomato salt, stir well


Cover it up with the lid and cook over low flame


After some time chicken will release some water, stir and again cover it up. cook until chicken gets tender


Add fennel and black pepper powder, stir well


Add coriander leaves, stir and turn off the flame


Tamil nadu chicken fry is ready
