Chicken Handi

‘Handi’ is basically a deep and wide – mouthed vessel used for cooking in Indian cuisine. Here the handi I am using is made up of clay but you can make this dish in steel handi as well. There are many different recipes of making chicken handi but the recipe I have tried is simple, easy, authentic and delicious . Here I have used mustard oil for cooking this dish but you can also use ghee / clarifying butter that will give a different aroma to your dish. Preparation time – 15 mins

Cooking time – 45 mins

Recipe type –  Main course

Serve – 4



Measurement cup used 1 cup = 220 ml

Chicken (with bone)– 1 kg (cut into medium size)

Onion (medium) – 4 -5 (finely chopped or chopped)

Ginger – 2 inch

Garlic pods – 2-3 or garlic clove – 20 -22

Tomato – 2 (chopped)

Curd – 2-3 tbsp

Red chili powder – 1 tsp

Turmeric – 1/2 tsp

Coriander powder – 2-3 tsp

Garam masala – 1 tsp

Bay leaf – 1- 2

Cumin seeds – 1/2 tsp

Black cardamom – 1 -2

Clove – 4-5

Cinnamon stick – 2 inch

Green cardamom / elaichi – 2-3

Mustard oil OR ghee – 4-5 tbsp

Coriander leaves – for garnishing





Rinse the chicken very well and drain it compeletly.

Now in mixing bowl take chicken, add curd and salt, mix very well and refrigerate it for 30 minutes. This process will make chicken tender and soft so do not skip this step.

After 30 minutes in a handi heat up  mustard oil or ghee.

Add whole garam masala (bay leaf, cinnamon stick, clove, green cardamom, cumin seeds and black cardamom), let them crackle well.

Add ginger – garlic (paste or grated), fry until raw smell goes off.

Add slit green chillies and chopped onion, fry until onion turns translucent.

Add marinated chicken and fry for 5-6 minutes over medium flame.

Add red chili, turmeric, coriander and garam masala powder, fry for one more minute.

Add tomato and salt, stir well. cover it up with a lid and let it cook.

After some time chicken will release its  own juice, lets chicken gets cooked in its own juice. For me it took 15 minutes to get cooked.

When chicken gets tender and soft, add chopped coriander leaves, stir and turn off the heat.

Handi chicken is ready serve it with any indian bread or rice.



In this chicken gravy i didn’t add water but if you want add 1/2 cup of water.

In Short


Rinse the chicken and drain it compeletly


Add whisked curd


Add salt


Mix well and refrigerate it for 30 minutes


Heat mustard oil or ghee


Add whole garam masala, let them crackle nicely


Take garlic and ginger, grate them or make paste


Add ginger – garlic, fry till raw smell goes off


Add slit green chilies and chopped onion


Saute until onion turns translucent


Add marinated chicken


fry for 5-6 minutes over medium flame


Add red chili, turmeric, coriander and garam masala powder, fry for one more minute


Add chopped tomato and salt, stir well


Cover it up with the lid and cook over low flame


After some time chicken will release some water, let chicken gets cooked in its own water by using lid


When chicken is tender and cooked add chopped coriander


Stir well


Chicken handi is ready
