Potato Pulao

Potato pulao is very simple and aromatic pulao. I make different variety of pulao and this is one of my favorite pulao from my childhood. Kids love potato dishes so you can pack this pulao in kids lunch box and i am sure they will love it. Hope you will try this recipe and please share your feedback with us.

Ingredients

Measurement cup used 1 cup = 220 ml

Basmati rice – 1 ¼ cups (better use oil basmati rice)

Potato / aloo – 2 medium size and cut into cubes

Turmeric powder / haldi – ½ tsp

Red chili powder – ¼ tsp

Bay leaf – 1- 2

Clove – 4-5

Cinnamon stick – 2 inch

Green cardamom / elaichi – 3-4

Mustard seeds – ½ tsp

Curd – 3-4 tbsp

Salt – as per taste

Ghee – 2 tbsp

Water – 2 – 2 ¼ cups

 For making green paste

Ginger – 1 inch

Garlic clove – 5-6

Green chili – 1-2

Coriander leaves – 2 tbsp

Cumin seeds / jeera – 1 tsp

Fennel seeds / saumph – 1 tsp

Method

Rinse 1 ¼ cups of basmati rice with water 2-3 times then soak it in water for 30 minutes. Then later drain all the water from the rice and set aside.

For making green masala take all the ingredients under ‘for making green masala’ in a small blender and make smooth paste. Set aside.

I made this pulao in pressure cooker so heat 2 tbsp of ghee in pressure cooker.

Add 1 bay leaf, ½ tsp mustard seeds, 4-5 clove, 3-4 green cardamom and 2 inch cinnamon stick, allow them to crackle nice

Add 1medium thinly sliced onion and fry until they begin to get light brown.

Add 1 medium sliced tomato, fry for a minute.

Then add the green masala paste, ½ tsp turmeric and ¼ tsp red chili powder, fry for a minute.

Add 3-4 tbsp of curd and fry until curd’s water evaporates.

Add 2 medium sized cubed potatoes. Fry a minute.

Add drained the basmati rice. Stir and mix the rice evenly with the masala.

Add water. You can add 2 to 2 ¼ cups of water. Do add water depending on the quality of basmati rice. Stir very well.

Cover and pressure cook it for 2 to 3 whistles or 6-7 minutes.

When pressure stales down on its own garnish it with chopped coriander leaves.
