Bottle gourd is also know as lauki or doodhi in India. There are many recipes made with lauki as lauki ka kofta, lauki chanadal, raita and muthiya. But my most favorite dish made with lauki is lauki ka halwa. Many kids do not like its taste but if you make halwa i am sure they will love it. In this halwa i am adding milk powder which gives it a nice texture and add extra flavor, if you have khoya please add it instead of milk powder. You can even add milk maid to this but at that time reduce the sugar quantity (see notes). So lets see how to make this yummy lauki ka halwa.

Ingredients

Measurement cup used 1 cup = 240 ml

 Lauki / doodhi/ bottle gourd – 2 ½ cups, grated

Milk –  1 ½ cups

Ghee / clarified butter – 2 tbsp

Sugar – 5 tbsp or if you want more sweet add more

Milk powder OR khoya – 2 tbsp OR milkmaid – 3 tbsp (if you are adding milkmaid just add 3 tbsp of sugar)

Cardamom powder / elaichi – ¼ tsp Or take 6-7 elaichi remove seeds and make powder

Cashew nuts – 5-6 Broken
Resins – 10 -12

Badam / almonds – 3-4 sliced, for the garnishing

Method

First peel the bottle gourd and rinse it in running water then discard the center part having seeds. Now grate it and set aside.

Medium heat the ghee in a thick bottom kadai and fry broken cashew and resins until cashew turns light golden. Take them out and set aside.

Now add grated bottle gourd and fry it over medium – high flame for 2-3 minutes.

Now add milk, stir well and bring this mixture to boil.

When milk starts to boil turn the flame at medium and cook it until milk absorbed. Stir in between. It will take almost 10 -12 minutes.

Now add sugar, stir well.

Add milk powder OR khoya as well (instead of them if you are adding milk maid add here).After adding sugar the mixture will release some water. So let it cook until the water evaporates completely and the mixture turn thick, it will 3-4 minutes. Stir in between.

When the water absorbed completely add fried cashew nuts and resins. Stir very well.

Finally turn off the flame and add green cardamom powder and mix with spatula.

Creamy and sweet bottle gourd halwa is ready serve it hot or at room temperature. While serving garnish it with sliced almonds.

 

Tips

Use any khoya or milk powder or milk maid as your convenient. if adding milk maid reduce the sugar quantity.

Use thick bottom kadai for making halwa.

In Short

Take 2 1/2 cups of grated bottle gourd

Heat up 2 tbsp of ghee in thick bottom kadai

Fry until light golden brown and take it out

In the same kadai and grated bottle gourd

Fry over medium – high flame for 2-3 minutes

Add milk and stir, bring this to boil

Cook until milk absorbed compeletly at medium flame, stir in between

Add sugar

After adding sugar the mixture will be watery

Add 2 tbsp of  milk powder or khoya, stir well (if adding milkmaid add here)

Cook until mixture turn compeletly dry, stir in between and  maintain low – medium flame

Add fried cashew and resins, stir then turn off the flame
