Egg less Vanilla Sponge Cake
So finally today i am sharing egg less vanilla cake recipe. This is my second attempt for making egg less vanilla cake and this time it comes out perfect. In my first attempt of egg less cake I used only baking soda which made the cake dry and hard. But this time i have used vinegar + baking soda + curd mix, the reaction of these ingredients make super moist and fluffy cake. You can make this cake even in pressure cooker. The pressure cooker method i have already posted in my blog. So here is the recipe I hope you will like it and make it.
Preparation time – 15 mins
Bakinging time – 40 mins
Recipe type – sweet / dessert
Measurement cup used 1 cup = 240 ml
Maida / all-purpose flour – 2 ¼ cups or 285 g
Baking powder – 1 tsp
Baking soda – 1 tsp
Salt – 2 pinch
Butter – ½ cup or 113 g
Milkmaid – 1 tin or 400 g
Sugar – 2 tbsp (powered)
Curd – 3 tbsp
Apple cider vinegar Or white vinegar – ½ tbsp Or use lemon juice
Milk – 1/3 cup, if baking in cooker add 1/2 cup
Vanilla essence – 2 tsp
Ensure that all the ingredients are at room temperature before you start mixing them.
Grease the cake mold no -3 with butter and dust little maida flour.
In a bowl take maida, baking powder, baking soda and salt, mix very well or sieve the mix 1-2 times. Set aside.
Preheat the oven at 180 c for 5 mins.
In a large mixing bowl take butter (at room temperature). Whisk with a mixer or spatula for 2-3 minutes or until fluffy and smooth.
Add powdered sugar and whisk for a minute.
Add milkmaid and whisk again until fluffy and smooth.
In a bowl take milk then add apple cider vinegar and vanilla essence. Add this mix immediately to the butter – milkmaid mixture and add curd as well. Mix gently.
Finally add maida mix in 2-3 parts, fold gently till completely mixed together without forming lumps.
Transfer this mix to the prepared cake mold.
Then place this mold to preheated oven.
First 10 mins bake the cake at 180 c. after 10 minutes set the temperature at 160 c and back for 20 – 30 mins or until a tooth pick insert inside the cake comes out clean and dry.
All the ingredients are should be in room temperature.
You can make this cake even in cooker but then add 1/2 cup of milk otherwise cake will be very dry.
Use proper measurements (cups and spoons) for making cake.
After preparing cake batter, immediately bake it.
Take maida or all purpose flour
Add baking powder
Add baking soda
Sieve it or mix very well
Take cake mold apply butter all over and spread little maida, set aside
Whisk it until fluffy and smooth
Add powdered sugar and whisk again until smooth
Add milk maid then whisk again until smooth
In a small bowl take milk
Add apple cider vinegar
Add vanilla essance
Add this mix to the prepared cake batter and mix gently (not much)
Add whisked curd
Add maida in 2-3 times and fold gently
Cake batter is ready
Immediately transfer it to the cake mold and bake in pre – heated oven (First 10 mins bake the cake at 180 c. after 10 minutes set the temperature at 160 c and bake for 20 – 30 mins or until a tooth pick insert inside the cake comes out clean and dry)
Cake is ready
Un mold the cake after 15 mins
Serve hot or at room temperature
