Baingan And Matar Bharta / Eggplant And Green Peas Bharta

Today I made one more famous Punjabi Dish Baingan ka bharta. But in this bharta I have added matar and flavored it with charcoal smoke. I have already posted baigan bharta recipe in my blog but this method is little different. Here i have used less spices comparing that. Both types of bhartha have their unique and authentic taste. Serve – 2-3



Measurement cup used 1 cup = 240 ml

Baingan / Eggpalnt – 450 – 500 g

Green Peas / matar – 1/3 cup

Onion – 1 medium

Garlic clove – 5-6 (mashed or grated)

Ginger – 1 inch (mashed or grated)

Tomato – 1 medium

Cumin seeds / jeera – ¼ tsp

Mustard seeds – ¼ tsp

Red chili powder – ½ tsp

Turmeric powder – 1/3 tsp

Coriander powder – ½ tsp

Coriander leaves – 1 tbsp, chopped

Salt – as per taste

Oil or ghee or butter – 2 tbsp + 1 tsp

Charcoal – 1 piece




Rinse baingan very well with water and dry roast it on gas stove flame. You can also roast it on oven. You have to roast it evenly so keep turning the baingan on gas flame.

Roast it until soft  and tender. To check it gets cooked or not insert knife. After roasting remove it from the flame and let it cool down then remove its charred skin with the hands and mash well. set aside.

In a kadia heat up ghee or oil.

Add cumin and mustard seeds, wait until they crackle.

Add chopped onion, saute till translucent.

Then add ginger – garlic (mashed or grated), fry until raw smell goes off.

Add red chili, turmeric and coriander powder, fry for few seconds.

Add chopped tomato and salt, stir well.

Add Mater, stir and cover it up with the lid cook for 2 minutes at low flame.

After 2 minutes add mashed baingan, stir very  well and cook for a minute or two minutes at low medium flame.

Add chopped coriander leaves, mix very well. then turn off the flame.

Make round deep in the center, keep one bowl then burn one charcoal on gas flame then keep it in bowl. Pour 2 tsp ghee in it and immediately cover the whole vessel with the lid. Wait for a minute by the time baingan will absorb all smoky flavor.

After a minute open the lid and remove charcoal bowl.

Super delicious baingan ka bharta is ready. Serve it with chapati or rice.



If you want insert two garlic clove in baingan before roasting and then start roasting it.


In Short



Roast the baingan on gas top flame


Roast until soft and tander


Discard the skin


Heat  ghee or oil


Add cumin and mustard then wait until crackle


Add chopped onion saute till translusent


Add ginger – garlic fry for some time


Add chopped tomato


Add red chili, coriander powder and salt


Add green peas, stir


Cover it up with lid and cook for 2 minutes over low flame


Open the lid


Mashed  baingan


Fry for a minute


Garnish with chopped coriander and turn off the flame


Make round deep in the center


Keep bowl


Burn the charcoal


Keep it in bowl


Pour ghee


Cover it immediately with the lid, let it be for a minute


Open the lid remove bowl


Baigan bharta is ready
