Easy Schezwan Paneer Frankie

Ingredients

Measurement cup used 1 cup – 240 ml

For making Filling

Paneer – 300 g (cut into small cubes)

Capsicum – 1, big, thin sliced

Onion – 1, Medium to big, sliced

Schezwan sauce – 2 tbsp

Red chili sauce – 1 tbsp

Tomato sauce – 1 tbsp

Black pepper powder – 1/8 tsp

Oil – 2 tsp

Salt – as per taste

For making Chapati

Wheat flour – 1 ½ cup

Curd – 2 tbsp

Oil – 2 tsp

Salt – ½ tsp

Water for making dough

Dusting flour

For green chutney

Coriander leaves – ½ cup

Green chili – 3-4 or as per taste

Garlic clove – 2

Ginger – ¼ inch

Salt – as per taste

Other ingredients

Chaat masala – as needed

Oil – as needed

Method

 

For making filling

In a non – stick pan heat 2 tsp oil.

When oil is medium hot reduce the flame add schezwan sauce, red chili sauce and tomato sauce, mix them very well.

Add paneer cubes. On the top of them add pepper powder and salt. Stir very well and matain low- medium heat otherwise our filling will may turn dry.

Add sliced capsicum and onion immediately turn off the flame and mix them together. Do not cook them because we want them crunchy.

Filling is ready. Keep it aside.

For making chapati

Take wheat flour, curd, oil and salt in a mixing bowl. Mix them together.

Slowly add water and make soft  dough.

Keep it aside for 15 – 20 minutes. Cover it with wet cloth or plate.

After 20 minutes roll the dough with your hands and devoid into 7-8 balls.

With the help of dusting flour roll them in round circle like chapati.

Place it to the hot tava. Apply little oil and cook both sides. Follow this method for all dough balls.

For green chutney

Take all the ingredients under for making green chutney in blender, add little water then blend till fine paste.

How to assemble the frankie

Take one chapati then spread ½ – 1 tsp green chutney on it.

Sprinkle some chaat masala.

Keep 2 tbsp of paneer filling on it and give it frankie shape (see pics).

Serve.

Take 1 1/2 cup wheat flour

Slowly add water and knee the soft dough

Cover it with wet cloth or any vessel for 15 -20  minutes

After 30 minutes fold it with your hands and devoid into 8 portions or balls, keep them aside (cover  with any vessel to avoid dryness)

Heat 2 tsp oil in a pan

When oil is medium hot simmer the flame then add schezwan sauce

Add 1 tbsp red chili sauce

Add 1 tbsp tomato sauce

Mix well with spatula

Then immediatly add 300 g cubed paneer, 1/8 tsp pinch pepper powder and salt

Mix very well turn off the flame and add 1 sliced onion and 1 sliced capsicum (do not cook onion and capsicum as we them crunchy)

Mix them togeather, keep it aside

Heat tava then roll one dough ball with help of dusting flour, roll like chapati then transfer it to the hot tava

Apply some oil and cook both the sides, follow the same method for other dough balls

For green chutney take 1/2 cup coriander leaves, 3-4 green chilies, 1 garlic, 1/4 inch ginger and salt in a blender

Add little water and make smooth paste

Apply 1 tsp chutney on chapati and sprinkle some chaat masala
