Mysure Pak / Easy Mysure Pak Recipe

Mysure pak is very famous sweet that is made with 4 ingredients besan, ghee, sugar and water. This is my second attempt of making mysure pak. For my first attempt it came little hard but this time it came perfect. Few things that you should always remember for making mysure pak are, do not compromise with ghee’s quantity because if you reduce the ghee quantity your mysure pak will be like burfi that will be hard. If you want to reduce the ghee add oil but at in this case, you have to compromise with its taste. Second is while roasting besan roast it at low – medium flame until raw smell goes off and nutty fragrance starts coming and also it should be light pink in color. At the same time do not over roast it, Keep stirring it while roasting the besan so that it doesn’t burn. Follow step by step instructions carefully I am sure your mysure pak will come out perfect like how you eat in outside shop.

Ingredients

Mesurement cup used 1 cup – 240 ml

Besan / gram flour – 1 cup

Ghee – 1 cup + 1 tsp

Sugar – 1 cup

Water – 1 cup

Method

Heat 1 tsp of ghee in a heavy bottom kadai and add 1 cup besan flour, roast it for 5-6 minutes until the raw smell goes off and nutty fragrant starts coming. Before roasting it was yellow but after roasting it is light pink (see pics).

Sift the roasted besan to get rid of lumps. This step is very important do not skip it.

Take the besan in a bowl and add ghee. Then mix them very well. Keep aside.

Grease a tray.

In a thick bottom kadai take sugar and water. Start heat it up and boil it until 1 string consistency. If you check between two fingers, a string will form (see pics). Turn flame at low when syrup is near to this consistency and keep checking until syrup reach to this consistency.

Now add the besan and ghee mixture to the syrup. Mix very well with the spatula and maintain the medium heat.

Keep cooking until the mixture rise up like forth (you can see mixture is frothy here and there) and the nice cooked besan smell comes from the mixture.

When the mixture is ready immediately transfer it to the greased try and tap it to make it even.

Let it cool compeletly then cut into desired shape.

After some time sugar will dissolve compeletly

Boil until 1 string consistency

Immediatly simmer the flame then add besan and ghee mix

Cook at low – medium heat and keep stirring

When the mix is frothy and the nice cooked besan smell comes from the mixture or it will form nets at the corners then turn off the flame

Transfer this to the greased tray

Wait till cool compeletly the cut into the desire shape
