Whole Wheat Banana – Walnut Cake / Egg Less Banana – Walnut Cake

Today I am sharing how to make eggless banana -walnut  cake which is super moist and spongy.  I made this cake using wheat flour but you can try it with maida as well.  .  Lets see its recipe.

Preparation time – 15 mins

Baking  time – 25 – 30  mins

Ingredients

 

Measurement cup used 1 cup – 240 ml

Wheat flour / maida  – 1 1/2  cup

Vegetable oil OR melted butter – 1/2 cup, (do not use any flavored oil)

Curd – 1/2 cup

Salt – 1 pinch

Sugar – ½ cup, make powder

Ripe Banana ( mashed) – 1/3 – 1/2 cup

Vanilla essence – 1 tsp

Baking soda – ½ tsp

Baking powder – 1 tsp

Walnut – 2-3 tbsp

Cinnamon powder – 1/2 tsp (if you like strong cinnamon flavor add 1 tsp)

Method

  Ensure that all the ingredients are in room temperature.

Preheat the oven at 180′ for 5 mins.

Grease the cake mold and spread little maida into it. Keep aside.

Combine the maida, baking soda and baking powder, cinnamon powder and pinch of salt.

Sieve 1-2 times and keep aside.

Now add broken walnut and coat it with wheat flour. set aside.

Peel the banana and mash it with fork or pav bhaji masher.

In a mixing bowl take oil, mashed banana, curd and vanilla essence, mix them well.

Now add powdered sugar, whisk until  mix together.

Now start adding flour to the mix, 2-3 times.  Gently fold the mixture until the flour  is mix together.  But do not over mix just mix gently

Now place this cake mix to the prepared cake mold.

Immediately place the cake mold in pre-heated oven and  bake it at 180′  for 25 – 30 minute.

After 25 -30 minutes insert a toothpick in the center of the cake if toothpick is clean means your cake is done.

Unmold is after 30 minutes.

Serve hot or in room temperature.

 

Tips

You can make this cake in pressure cooker too.

Use fresh ingredients for making cake.

Always use powdered sugar for making cake.

All the ingredients should be in room temperature.

Banana cake always taste good when it is fresh.

Mix well

Add 1/2 cup powdered sugar

Add wheat flour in 2- 3

Fold it gently

Transfer it to the greased and floured mold

Place it to the oven and bake the cake at 180 ‘ for 25-30 minutes
