Lemon Rice / How To make Lemon Rice

Lemon rice very popular south Indian dish that you can make easily when you are in hurry. My kids love eating this with apalam. Try this simple and yummy lemon rice and share you feed back with us.

Ingredients

Measurement cup used 1 cup = 240 ml

Rice – ½ cup (uncooked)

Water – 1 cup, for cooking rice

For making lemon rice

Lemon – ½ to 1, medium, squeeze juice

Peanuts – 1 tbsp

Urad dal / black gram dal – 1 tsp

Mustard seeds – ½ tsp

Hing / asafetida – a pinch

Whole red chili – 1, broken

Green chili – 1- 2, slit

Curry leave – 1 stem

Oil – 1 tbsp

Method

Take 1/2 cup of basmati rice or any regular rice.

Rinse it it well and add 1 cup of water. Pressure cook it for 2-3 whistle or until cooked compeletly, but insure that it shouldn’t over cooked.

When the pressure settles down spread it on a big plate and wait until cool compeletly.

Heat oil in a frying pan.

Fry peanut until nutty aroma comes. Take it out and keep it aside.

In the same pan first reduce the heat to low – medium, add urad dal, fry until light pink.

Add mustard seeds , let it crackle.

Add broken red chili, green chili and curry leaves, fry for few seconds.

Add turmeric powder, stir.

Add hing and cooked rice. Add salt top of it.

Mix well then turn off the heat.

Add lemon juice and peanuts, stir to mix. Here if you want add chopped coriander as well.

Lemon rice is ready. Serve it hot or cool with potato fry, sambar potato fry and apalam. 

Tips

Do not over cook the rice.

Before making lemon rice let the rice cool down compeletly.
