Paneer Tava Masala

Ingredients

Measurement cup used 1 cup = 240 ml

Paneer / cottage cheese – 250 g, cut into small cubes (use fresh and soft paneer)

Capsicum / Shimla mirch – 1 medium, small chopped

Onion – 1 medium, finely chopped

Green chili – 1, finely chopped

Ginger – garlic (paste or crushed) – ½ tbsp.

Tomato – 3 medium, make paste

Red chili powder – 1 tsp

Turmeric – ½ tsp

Coriander powder – 1 tsp

Pav bhaji masala – 2 tsp, Or 1 tsp garam masala + ½ tsp amchur powder

Cumin seeds / jeera – ½ tsp

Kasuri methi / dry fenugreek leaves  – 1 tsp, crushed

Butter / oil – 2 tbsp, better use butter

Method

First cut the paneer into cubes, cut the capsicum into very small pieces, finely chopped onion and green chili, make tomato paste and make ginger garlic paste. Keep them aside.

Take non – stick tava or dosa tava and heat it up.

When the tava is hot place butter in it but do not allow it to melt compeletly.

When the butter is half melted add cumin seeds, allow it to crackle.

Add ginger –  garlic, fry until raw smell goes off.

Now add finely chopped onion and green chili, saute until onion turns translucent.

Now add pav bhaji masala, red chili, coriander and turmeric masala, saute just for few seconds. Do not burn them or over fry them.

Add smooth tomato paste and finely chopped capsicum, stir with spatula until water evoportes and masala mixture turns semi dry consistency.

Add kasuri methi and salt, stir for few seconds.

Now add 4 tbsp of water in two times. First add 2 tbsp of water stir,  wait for few seconds then again add 2 tbsp of water stir and immediately add paneer cubes and gently stir with spatula to mix with the masala then turn off the heat. Here mixture shouldn’t be dry so if needed add some more water.

Serve this delicious paneer side dish with hot chapati, paratha and garlic nan.

 

Tips

If possible use thick iron tava.
