Namkin Masala Sev / Easy Snacks / Masala Sev Recipe

Ingredients

Measurement cup used 1 cup – 240 ml, cut into cubes

Besan /Gram flour – 2 cups

Ajwain / carom seeds – 1 1/2 tsp

Red chili powder – ½ – 1 tsp

Turmeric powder – 2 pinch

Hing / asafotida – 1/4 tsp

Black pepper powder – 1/2 – 1 tsp

Black salt – 1/2 tsp

Vegetable oil – for deep frying + 4 tbsp

Salt – Adjust

Water – ½ cup + 4 tbsp (approximately)

Note – To get more crispy and light  sev add 2 tbsp of rice flour and 2 pinch backing soda or khane ka soda.

Method

 

Take besan flour in a mixing bowl. Add red chili,ajwain, black salt, hing, black pepper and salt, mix very well with your hand.

Add 3 tbsp oil for moyan, mix together.

Now slowly add water and make medium soft dough then cover this bowl with any lid. Let the dough rest for about 10 mins to ½ hours.

After 10 mins grease your hand with some oil and again fold the dough with your hands, this processes will give you light and crispy sev. This step is very important so do not skip it.

Heat the oil for deep frying in a kadai. While oil is heating up take the sev maker and use the disk with medium  whole. Grease the inside of sev maker and fill ¾ with the dough.

Once in oil is hot reduce the flame to the low – medium and keep the sev maker on the top of the oil then start pressing it, as soon as noodles fall on slowly move the sev maker in a circular motion so that they do not stick to each other.

Let the sev fry for a minute then turn it other side, fry for another minute. Sev takes very less time to fry, it will take just 2 minutes to fry over medium flame. Once they become light golden in color take them out and Once they become light golden in color take them out and leave them in pepper towel.

Now follow the same process for the remaining dough.

After the sev cools down completely store it in a air tight jar.

Enjoy the crispy namkin sev with tea or coffee.

 

Tips

To get more crispy and light  sev add 2 tbsp of rice flour and 2 pinch backing soda or khane ka soda.
