Tomato – Carrot Sandwich
Date – 20.10.2016
Measurement cup used 1 cup – 240 ml, cut into cubes
Bread slices (brown or white) – 10 -12
Carrot – 2, medium, grated
Tomato – 2, medium, remove seeds and chopped into small cubes
Onion – 1, medium, chopped
Mayonnaise – 2 tbsp Or fresh thick curd – 2 tbsp
Black pepper powder – 1/2 tsp
Salt – as per taste
Green chutney – 1/4 cup (take 1/2 cup green coriander leaves + 2-3 green chilies, add some water and salt then blend into the smooth paste)
Butter – as needed
Take 2 medium size tomato. Cut into the half, remove seeds then chop into the small cubes. Take 2 medium size carrot, peel and grate them, keep them aside. Take a medium size onion and chop it.
In a bowl take grated carrot, chopped tomato and chopped onion. Add mayonnise or fresh curd, black pepper powder and salt, then mix together.
Now take two bread slices. Apply some butter.
On the top of the butter apply some green chutney, apply on single bread slice or on both the bread slice
Now place 2 -3 tbsp of carrot – tomato filling on it
Then cover it with another slice.
Make sandwich in sandwich maker or in tava. And enjoy this easy and healthy breakfast with tomato sauce.
