Egg – 4-5
Onion – 1 medium, finely chopped
Green chili – 1, chopped
Ginger – garlic – 1 tsp, crushed or paste
Red tomato – 1 medium, grated or make paste
Red chili powder – ½ tsp or as per taste
Turmeric – ¼ tsp
Garam masala – ½ tsp
Cumin – ½ tsp
Salt – as per taste
Butter / oil – 1 1/2 – 2 tbsp
Coriander leaves – for garnishing
Chop the onion and green chili, prepare ginger – garlic paste or crush them and grate the tomato or you can also use tomato paste. Keep them aside.
Heat the butter or oil in a pan or kadai. But if you are useing butter do not burn it.
Add cumin seeds, allow it to crackle.
Add ginger- garlic and chopped green chili, fry them until the raw smell of ginger – garlic goes off.
Add chopped onion, saute it until onion turns light pink.
Add tomato paste, red chili, turmeric and garam masala powder.
Fry this mixture over medium heat till oil saparets from it.
Break the eggs and add to the prepared masala. Stir immediatly and continuously with spatula.
Before this mixture gets dry add chopped coriander leaves.
Fry it for some more time until its compeletly dry. Turn off the heat.
Serve the easy egg bhurji with chapati or paratha.
