Tomato Soup

Serve – 3-4

Ingredients

Ripe and red tomato – 5-6 medium, cut into thick slices

Onion – 1 medium, sliced

Ginger – ½ inch, chopped

Garlic (medium) – 4-5, chopped

Milk – 2-3 tbsp

Water – ½ cup

Butter – ½ tbsp + oil – ½ tbsp.

Salt – as per taste

Black pepper – for the garnishing

Roasted cumin powder – a pinch (optional)

Method

In a kadai heat 1/2 tbsp butter + 1/2 tbsp oil.

Add 1 medium sliced onion, 4-5 chopped garlic and 1/2 inch chopped ginger. Saute them for few seconds or until the raw smell goes off. But do not change the color. (here you can also use pressure cooker instead of kadai)

Then add 5-6 sliced tomatoes. Fry them for few seconds, add pinch of roasted cumin powder and salt, mix and cover it up with the lid, let the tomato gets cooked for 3-4 minutes at low flame. After 3-4 minutes tomato will be soft and mushy so now turn off the heat. Wait till mixture cools down completely..

When the mixture cools down compeletly transfer it to the big blender jar, if needed add little water and blend till very smooth paste.

Now filter it with the strainer to remove seeds and skin of tomatoes. Here you will get a very smooth and thick paste.

Now add 1 tsp sugar, 1/2 cup of water and 2-3 tbsp of milk to the prepared paste. (here if you want add some cream or malai to make it more tasty)

Now again keep it on flame and bring it to boil, then let it cook for 2 more minutes.

After 2 minutes of cooking now your tomato soup is ready. Serve it hot and garnish it with black pepper powder and bread croutons / fried bread pieces.
