Shahi Paneer

Ingredients

Measurement cup used 1 cup = 240 ml

Paneer – 250 g, cut into cubes, use fresh and soft paneer

Milk – ½ cup

Water – ¾ cup

Kasuri methi / dry fenugreek leaves– 1 tsp

Red chili powder – ¼ – ½ tsp

Kashmiri red chili powder – ½ tsp

Turmeric – ¼ tsp

Garam masala – ½ tsp

Sugar – 1 tsp

Cream – 1- 2 tbsp

Oil – 2 tbsp + butter -1 tbsp

 

For making paste

Onion – 1 medium, roughly chopped

Garlic clove – 4-5

Ginger – 1 inch, cut into cubes

Green chili – 1

Tomato – 2, medium, cut into cubes

Cinnamon stick – 2 inch

Green cardamom – 3

Clove / launag – 3

 

Method

Take all the ingredients under ‘for making masala paste’ in a blender and make very smooth paste. Keep it aside.

Heat oil + butter or only butter in a kadai. Do not burn the butter.

Add blended paste and red chili, Kashmiri red chili, garam masala and salt to the kadai then fry it at low flame until oil separate from the masala.

Now add ½ cup of milk and ¾ cup of water, stir well. Add sugar and kasuri methi. Keep the flame at high and bring it boil then turn the flame at low and let it boil for 2 minutes.

Finally add paneer cubes and garnish it with fresh cream or malai and stir. Here if you want also add chopped coriander. Turn off the heat.

Delicious shahi paneer is ready. Serve it with and hot Indian bread and jeera rice.
