Method

First in a vessel take 1 ½ – 2 cups of water. Keep it on flame and bring it to boil, add soya chunks then immediately turn off the heat. Leave it for 2-3 minutes in this condition then drain out the water completely. Keep it aside.

Now in a small blender take the ingredients under ‘ for making paste’ and blend into smooth paste.

Transfer it to the bowl then add red chili, turmeric and coriander powder, mix and leave it aside till we need it.

Heat 3 tbsp of oil in a kadai.

When oil is medium hot add 1/2 tsp cumin seeds. Allow it to crackle.

Add 1 small chopped onion. Fry it till turn light pink.

Now add prepared masala paste. Fry it until oil saparets from the masala.

Now add 1 medium tomato paste, 1 tsp garam masala and 1 tsp kasuri methi. Fry it until again oil saparets.

Now add 1 to 1 1/4 cup of water then bring it to boil over high flame. Once the gravy starts to boil simmer the flame and wait for 2 minutes. Let the gravy cook at low flame so that it will absorb all the flavor.

Now squeeze the soya chunks and add to the gravy. Just wait for 3-4 seconds then add chopped coriander then turn off the heat.

Soya masala is ready. Serve it with chapati and steamed rice.
