Dum Ka Meat / Easy Mutton Curry

Ingredients

Mutton – 750 g, with bone

Onion – 3-4 medium, finely chopped

Garlic clove – 18 -20

Ginger – 2 inch

Tomato – 2 medium

Green chili – 2

Curd – 3-4 tbsp

Red chili – 1 tsp

Turmeric – ½ tsp

Coriander powder – 1 tbsp

Cumin seeds – 1 tsp

Bay leaf – 1

Clove – 3-4

Green cardamom – 3-4

Cinnamon stick – 2 inch

Black cardamom – 2

Oil / mustard oil – 3 tbsp

Water – 1/2 – 3/4 cup

Salt – as per taste

For Tadka

Butter / ghee – 1 tbsp

Garam masala – 1 tsp

Method

Rinse the mutton pieces very well with water and drain it compeletly.

In a blender take tomato cubes, garlic, ginger and green chili. Grind into smooth paste. keep it aside.

Place these mutton pieces to the pressure cooker then add finely chopped onion, prepared paste, curd, red chili, kashmiri red chili, turmeric, coriander powder, salt, bay leaf, green cardamom, black cardamom, clove, cinnamon stick and  cumin seeds. Add 3 tbsp of oil and 3/4 cup of water then close the cooker’s lid.

Now keep the pressure cooker on gas stove then turn on the heat.

For the pressure cooking after 1 whistle turn the heat at low and cook for 5 -7 more minutes. (cooking time depends on mutton’s quality so cook accordingly).

When the pressure cooker settled down on its own open the lid. To check mutton is cooked or not, press it with your fingers. (If it is not cooked, cook for some more time.)

Now take a small tadka pan or kadai, heat butter or ghee, add garam masala powder just fry for few seconds (but it should not burn), place this tadka to the mutton and cover it for a minute. This tadka will add nice flavor to the curry.

Now after a minute open the lid and again keep the cooker on flame. Allow it to cook for 3-4 more minutes at low heat so that the curry will absorb all the takda and masala flavour.

At the end add chopped coriander leaves and turn off the heat.

Serve the easy and delicious dam ka meat with any Indian bread and rice.
