Soya Chunks Fried Rice

INGREDIENTS 

For cooking rice

Basmati rice or any raw rice – ½ cup

Water – ¾ – 1 cup

 

For making fried rice

Soya chunks (small size) – ½ cup

Green peas (frozen or fresh) – ¼

Sweet corn – ¼ cup

Onion – 1, medium, chopped

Ginger – garlic (mashed or paste) – 1 tsp

Cumin seeds / jeera – ½ tsp

Red chili powder – ¼ tsp or adjust accordingly

Turmeric – ¼ tsp

Shahi biryani masla or garam masala – ½ tsp

Salt – as per taste

Ghee / butter – 2 tbsp

Coriander leaves – chopped

METHOD

For cooking rice

Take ½ cup of basmati rice or raw rice in a pressure cooker. Wash it couple of times with water then soak it for 15 – 20 minutes. After 15 -20 minutes drain it completely.

Add ¾ cup of water to the rice and pressure cook it for 2-3 whistle. Do not over cook the rice other wise it will break while frying.

When the pressure cooker settle down on its own open the lid and transfer this cooked rice to the plate and wait until cools down compeletly. 

 

For making fried rice

In a deep pan heat 2-3 cups of water. When water stars to boil add soya chunks, wait for 2-3 seconds then turn off the heat.

After 2 minutes drain out the   water and squeeze it. Keep it aside.

Heat butter or ghee in a kadai or pan.

Add cumin seeds and allow it to crackle.

Add ginger – garlic, saute till raw smell goes off.

Add chopped onion, saute until translucent.

Add squeezed soya chunks and fry it for a minute.

Now add sweet corn and green peas, fry for ½ minute over medium heat.

Add red chili, turmeric, salt and shahi biryani masala or garm masala then mix with spatula.

Add cooked and cool rice. 

Mix very well.

Add chopped coriander leaves, stir then turn off the heat.

Soya chunks fried rice is ready.
