Kesar – Pista Kulfi

  Measurement cup used 1 cup = 240 ml                                                                                                                                                             

INGREDIENTS

 

Full fat milk – 1 liter

Milk powder – ½ cup OR malai / cream – 1/3 cup OR mava / khova – 1/3 cup

Sugar – 1/3 – ½ cup, adjust according to your taste

Saffron strands – 20 -25, soaked in a tbsp of hot milk

Pistachios – 12, roughly chopped

Badam / almonds – 12, roughly chopped

Cardamom / elaichi – 4, powdered (optional)

 

 

METHOD

 

First, start heating milk in a thick and wide bottomed pan. Once it starts to boil reduce flame to the low – medium.

Continue boil the milk over low – medium heat and keep stirring with spatula. And also use spatula on the sides of the pan to remove cream.

Once milk reduce to the ½ of the quantity, add milk powder and mix well with the spatula. Keep cooking for 2-3 more minutes.

Now add sugar, saffron milk, chopped pistachios and chopped almonds. Mix well and cook for 2-3 more minutes.

Turn off the heat then add cardamom powder (optional). 

Leave it under fan and let it cool down compeletly. 

Transefer this kulfi mixture to the kulfi mold then keep it in freezer for 5 hours to over night.

After 5 hours kulfi is ready. 

Take it out with the help of knife and Enjoy.

Keep cooking for 2-3 more minutes then turn off the heat

Add cardamom powder (optional), leave it under fan and let it cool down

Transfer this kulfi mixture to the kulfi mold then keep it in freezer for 5 hours to over night.
