Paneer Do Pyaza Recipe

    Do pyaza is basically south – Asian curry dish. In this dish onions are added at two stages during cooking hence it is called ” DO Pyaza ”  . Do pyaza can be made with both veg and   non – veg and today I am sharing Paneer do pyaza recipe.                                                                                                                 

Preparation Time – 15 mins

Cooking time – 30 mins

INGREDIENTS:

 

Measurement cup used 1 cup = 240 ml

 

250 g Paneer /cottage cheese (cut into cubes)

1 small Capsicum / Shimlamirch, cut in square

1 medium onion, chopped finely or grated

1 medium onion, cut into medium size square

2 big ripe tomato, make paste

1 tbsp, ginger – garlic paste

2 green chili, slit cut

½ – 1 tsp red chili powder

½ tsp turmeric

2 – 3 tsp coriander powder

1 tsp garam masala powder

1 tbsp malai / fresh cream

1 bay leaf

2-inch cinnamon / dalchini

½ tsp cumin / jeera

½ tsp sugar (optional)

Salt as per taste

 1 tbsp + 3 tbsp cooking oil

Water – ¾ cup

 

 

Method;

  First, heat 1 tbsp oil in a kadai. Once oil is hot, add square shaped onion and capsicum. Sauté them for a minute but do not change the color. Take them out and keep aside.

 In that same kadai heat 2-3 tbsp oil.  

 Add cumin, bay leaf and cinnamon stick. Wait till they crackle.

Add ginger – garlic paste, fry till raw smell goes off.

 Add finely chopped onion, saute till onion turn light pink.

Add slit green chilies, red chili, turmeric coriander powder. Fry at low heat just for ½ minute. Keep the heat at low it is very important to avoid burning.

 Add tomato paste and garam masala. Now fry until the oil saparets from the mixture.

 Once oil starts separates from the masala, add water and salt. Bring it to boil at high flame and then reduce the flame and cover it with any lid. Here cook the gravy at low heat for about 2-3 minutes so that the gravy will absorb all the flavors of masalas and give nice aroma after it gets cooked.

 After cooking gravy for 2-3 minutes add fried onion and capsicum. Cook for 1 more miunte but do not cook for long time we need onion and capsicum bit crunchy.

 Add paneer cubes and cream /malai. Mix well then turn off the heat.

Paneer do pyaza is ready. Serve it with any hot Indian bread.

  

 Tips ;

In this recipe you can also add kasuri methi / fenugreek leaves to get Punjabi touch.

Use fresh and soft paneer.

Add water and salt and bring it to boil

Once gravy starts to boil cover it with the lid, simmer the heat and let it cook for 2-3 minutes

Add capsicum and onion, cook for one more minute at simmer
