Milk Maid Carrot Halwa / Carrot Halwa (method – 2)

  Measurement cup used 1 cup = 240 ml  

                                                                                                                                                           

INGREDIENTS

 

Carrot / gajar – 1 kg

Milk – 4 cups

Milkmaid – 300 g for medium sweetness OR 400 g for more sweetness

Clarified butter / ghee – 3 tbsp

Cashew nuts / kaju – 6-7, broken

Raisins – 1 – 2 tbsp

Cardamom powder – 2 pinch or take 3-4 green cardamom then make powder  

  

 

METHOD

 

Rinse, peel and grate the carrots.

Heat 3 tbsp of ghee in a thick bootom kadai or pan. Add the grated carrot.

Saute the carrot for 2-3 minutes or till they turn bit tender and maintain low – medium heat. Stir them in intervals.

Then add the milk. Keep cooking at medium heat until the whole milk reduces to the ¾ of its quantity and also stir in intervals.

Once the mixture reduce to the ¾, add milkmaid, cashew and raisins . Mix well and turn the heat at low – medium, stir often and keep cooking till the mixture dries up.

Finally, add cardamom powder immediately turn off the and stir well. (before adding cardamom powder check the halwa, it needed add some sugar).

Serve gajar ka halwa hot, at room temperature or chilled.
