Chicken Do Pyaza

 Do pyaza is basically south – Asian curry dish. In this dish onions are added at two stages during cooking hence it is called ” DO Pyaza ”  . Do pyaza can be made with both veg and   non – veg and today I am sharing chicken do pyaza recipe.                                                                                                                                                                                                                                                   

Preparation Time – 20 mins

Baking time –  30 – 35 mins

Recipe type –  sweet / dessert

Measurement cup used 1 cup = 240 ml                                              

INGREDIENTS:

 

Chicken with bone – 500 g

Onion – 1, medium, cut in square shape

Capsicum – 1, small, cut in square shape

Shah jeera / black jeera – ½ tsp

Bay leaf – 2

Cinnamon stick – 1 long

Green chili – 2-3 slit cut

Red tomato – 2, medium, make paste

Red chili powder – ½ tsp

Turmeric powder – ½ tsp

Coriander powder – 2 tsp

Garam masala powder – 1 tsp

Kasuri methi / dry fenugreek leaf – 1 tsp

Water – 1 cup or more

Fresh coriander leaves – for garnishing

Cooking oil – 5-6  tbsp

Salt – as per taste

 

For making paste

Onion – 2, medium, roughly chopped

Garlic clove – 12 – 15

Ginger – 2 inch

 

 

 

 

Method;

 Take the ingredients under, ‘for making paste’ in a blender jar, add 1 tbsp water and make very fine paste. Set aside.

 Heat 1 tbsp of oil in a pan or kadai.

 Add square cut onion and capsicum, fry for a minute over medium – high flame. Take them out and set aside.

 Heat 4 tbsp of oil in that same pan or kadai.

 Once oil is smoky hot, add shah jeera, bay leaf and cinnamon stick, saute for few seconds.

 Add grinded paste, fry it until the oil separates from the masala.

 Add slit green chilies, red chili, turmeric and coriander powders. Fry at low heat for a minute.

Add tomato paste, once again fry until the oil separates.

Add chicken pieces, stir nicely to mix with masala. Now cover it up with the lid and cook for 2 -3 minutes over medium heat.

After 2-3 minutes open the lid and add garam masala, kasuri methi and salt. Stir nicely and once again put lid and cook for another 3-4 minutes.

Now add water and bring it to boil over high heat and then reduce the heat to the low. Again cover it up with the lid.

And cook till chicken get tender and cooked. For me it took 20 minutes.

Once chicken is tender, add fried onion and capsicum then cook for a minute.

Finally garnish with chopped coriander leaves and then turn off the heat.

Chicken do pyaza is ready.

Serve with any Indian bread or plain rice.
