 Aam Ki Kalungi / Aam Ki Khatti – Mithi Kalungi

Ingredients

Measuring cup used 1 cup = 240 ml

Raw mango (use kalmi aam) – 3 (medium)

Jaggery/ gur – 1 ½ – 2 cups (accordingly)

Water – 2 ½ cups

Salt – 1 – 1 ½ tsp

Red chilli powder – ½ tsp

Turmeric powder – ½ tsp

Mustard seeds – ½ tsp

Cumin – ½ tsp

Ghee – 2 tsp

 

 Method

Rinse the raw mango, peel them and cut into cubes. Set aside.

Heat ghee in a kadai.

Add mustard and cumin seeds, let them splutter nicely.

Add raw mango cubes, stir well.

Put the lid and cook mango for 2 minutes over medium flame. Be carefully they should not burn.

After 2 minutes open the lid and add red chili, turmeric and salt. Stir very well.

Again put the lid and cook them for 2 minutes so that mango will absorb all the spice flavor.

Now open the lid, add water and jaggery, stir well.

Bring this mixture to boil.

Now  cook mango for 5-6 minutes over medium flame.

After 5-6 minutes turn off the flame.

Serve the aam ki kalungi hot or cool with chapati, paratha or puri.

You can keep it in refrigerator for a week.
